link: main character, basically each game is a new reincarnation of him or his spirit or something...
zelda: princess, helps link take down gannon by either directing him or giving him something (normally directing him). same with link, its like a reincarnation of her.
gannon: main enemy, basically really freaking strong. (background story in a nutshell is with his people, every thousand years a male comes around. he is one of them. all the rest are females, and at least in all the games i have played they are thieves and stuff.) each game has the same gannon (i’m pretty sure).
triangle things: triforce. each part of it represents one of the gods who made the earth, and when you put them together, i think you like get a wish granted. i’m pretty sure at one point gannon had gotten all 3 pieces, and thats why he is so strong. as it stands, in every game link has the triforce of courage, gannon has the triforce of power, and zelda has the triforce of wisdom. you put them together, and you get the triforce.
something else...: there are sort of two things that link all zelda games (other then zelda, link, and gannon): the triforce and the master sword. i just sort of explained the triforce, the master sword is some special sword that link needs to take down gannon. without it, he cant really do anything against him.
more other stuff: the only other thing else i can think of to tell you is the great fairies. they always help link once you find them. in this game, they are all in the same place, but its pretty hard to get them all (but well worth it.) you should learn everything else you need to know as you play through the game. this is just stuff that you would probably figure out after a bit, but its better if you know them going in.

to an effect. those are the elements that stay the same, but a lot of things change. different races you come across, different forms you take, different specific plot, but those are the main things that i have noticed that hold all of the plot together. once in a while you come across a pretty unique one (wind waker was one of them. the entire area is covered in ocean, and you move around on boat. all the races are different, and it refers to the other games as sort of myths that happened long ago), but the overall zelda plot is often pretty similar. its been my experience that if you look closer, there are a lot of specific plot differences, but i have actually not played enough zelda games to know. i have only played about 4 or 5 of them. they have all been very unique (one was sort of the basic zelda adventure (oot), one was a game that took place over 3 days and you keep going back in time (mm, that one actualy doesn’t have zelda or gannon. its a weird zelda game...), the one covered in ocean (ww), and tp, which is the closest to oot, except a few details that i can’t really tell you...), but i’m not sure if that holds for all zelda games or just the few i played. cid would probably know more then i would in this subject, he seems like a big zelda fan. also, if you want to know more about the plot before you get into tp, wikipedea is great for things like this.

It could be said like this, however even though most of the games revolve around defeating Ganon and rescuing Zelda they still stay different enough for people to enjoy the series.
For example, Ocarina of Time finds Link as a young boy who is chosen by the Gods, he travels 7 years into the future to find that Ganon (Ganondorf) has enveloped the world in darkness. His quest is to first find the 7 sages and then defeat Ganondorf.
However, Wind Waker finds the young Hero on a small Island in the northern area of a large ocean. His quest in this game is indeed to defeat Ganon, however it takes a complete turn from what the Ocarina was. Instead of finding Princess Zelda you find a young woman who turns out to be the reincarnate of Zelda. Instead of stopping Ganondorf from plunging the world into Darkness you’re stopping him from gaining control over the Tri-Force.

Are you sure it’s a reincarnate? I thought it was a direct ansesctor, with the bloodline and all. All the Princess Zeldas I believe are realated to the last Zelda and each other.

No it is a reincarnated person.
The only exception is the Wind Waker Link who is in no way related or recarnated to the Link from OoT. I read this on some site
