Ultimate is a retelling of the story but much closer to the manga. Hellsing strays away from the managa just a few episodes into the series. Ultimate sticks true to the original text and is completely different than the first series after the 2nd episode. They eps are also an hour in length and are more violent, bloody, and have better voice acting.
