The circular shockwaves emitted when Tabuu spreads his wings are called Off Waves. This devious technique is capable of immediately transforming many fighters in distant locations into trophies. You could say that this power alone makes Tabuu a nearly invincible opponent.
According to the story, Off Waves can 'immediately' transform fighters in distant locations into trophies.
Since this is SSB-wise canonical, and you are basing your arguments on assumptions, we could say Off Waves should work on Sephiroth. ---

Sephiroth’s body, yes. He still has control over Jenova cells, including the ones that would make up his body.
But would that work in Subspace?
