1. Because most people care about other people and respect them. Attacking their beliefs is disrespecting them quite a lot, something many people do not want to do.
2. That is mostly up to the individual. Some people care about what someone else believes in, whether to criticize it or respect/understand it further, while others simply don’t care. (If you can understand that)

Its not so much that we care or don’t care for other peoples beliefs, just that our curriousity and quest for knowledge draws us to those with strong belief systems, perhaps by promise of obtaining more knowledge or gaining a higher status n society over those below us by borowing their knowledge and beliefs to augment their own.
Weather we should care or not care is down to your own empathy and open mindedness. It also depends on whether you actually care ina caompassionate manner or merely sek to unsurp their own beliefs and replace them with nothing or even your own sets of values. I feel that mankind should be more tollerant and understanding to the diversity that exists withing humanities various belief systems and should cease trying to discredit them and rather embrace them for what they are....

I understand what you mean about respecting their beliefs, but the point I am wanting to know is why some people care about other’s beliefs. I could respect anyone’s belief, and not care about it.

It is up to the individual. I can understand that. Though it puzzles my why someone cares about someone else’s belief. I can understand respecting it, but there is no reason to disrespect someone just because of what they believe in or what kind of person they are.
