As for Luke moving so fast that he can not be seen, I’ve yet to see something in the wookieepedia article. Regardless, Sephiroth could cast Stop and freeze him in place. Then he could mentally and physically torture him to his will, or simply leave him there.

I’m staring right at the wookieepedia article and find nothing on hyper speed. And, if we’re going on a psychological level, then Sephiroth would simply increase his speed to match Lukes. He would also likely weaken Luke with the variety of other spells and attack him telepathically, where he is likely to succeed because of his immense will. He can create plenty of illusions as well. But if we’re going on a psychological thing, it’s likely Luke wouldn’t use his full ability.
