Itachi states he was immortal. That doesn’t make it fact. Itachi also stated that only another Uchiha could defeat him. Madara says his longevity in life could come from his potent chakra. That doesn’t make him immortal.

His physical body may not die, but his spiritual body can. Making him a shell that is alive.
